2661. Chinese Preserved egg (皮蛋, pídàn). “(Usually)A duck egg that has been preserved in a mixture of clay, salt, ash, lime, and rice hulls for several weeks and even months. The result of this chemical process leaves the egg yolk a dark green color and transforms the whites into a translucent, black jelly. The egg will have a different flavor and has an odor of sulfur and ammonia. Some eggs have patterns on their surface that look like snowflakes or pine branches!”
For green teas, you want to avoid steeping them for more than 3-5 minutes or else it gets really bitter. The same goes for if you’re steeping mate.
White teas are really delicate, so if the temperature is too high, it’ll ruin the flavour.
Herbal teas need to be steeped at a higher temperature for a longer time because… well, they’re not tea leaves! It takes more to get whatever it is you’re using to release its flavour, basically.
There’s more to it, but that’s all I can remember off the top of my head.

it seems like such a waste in a place that rains this much. water spots and excessive moisture does not make furniture look very nice.
kris went out of town to lay his meemaw to rest today. it was bittersweet hearing him reminisce of a part of his childhood that was untainted. this will also be an interesting period of time without him. this has been the longest time he’s been away from home since we pcs’d here. i almost forgot what it feels like to multi task with a little one. it’s funny how nick only sleeps in when it’s just him and i. we’re gonna have a nice lazy week. it’s nice to have some sick days and vacation hours to put towards this so i don’t have to worry about not working. nick and i are also both coming down with a raspy cough. except my ears are ringing. i hope i don’t have strep. yay for chunky mucous. not!
